Introduction

Oh so yummy and really easy! This savory-sweet sauce has just a hint of coconut and curry. Even my picky eaters loved it! Oh so yummy and really easy! This savory-sweet sauce has just a hint of coconut and curry. Even my picky eaters loved it!

Ingredients

    1 good size butternut squash, peeled and cubed
    2 T butter
    2 T olive oil
    2 c. chicken broth
    1 can LITE coconut milk (I like the brand "A Taste of Thai")
    1 T. curry powder
    1/4 t. nutmeg, ground

Directions

Peel and cube your squash. Heat butter and olive oil together in a large skillet, then add squash and toss to coat. Add chicken broth and cook covered on medium high heat until squash is nice and soft, stirring occasionally.

When squash is soft, use a potato masher, food processor, or immersion blender to get a smooth consistency. Then add remaining ingredients and simmer for at least 10 minutes to let the flavors combine.

Makes at least 8 generous servings, depending on the size of your butternut squash.

We paired it with grilled chicken and whole wheat pasta (not included in the nutritional info) and topped it with roasted pumpkin seeds. I think it would also be delicious over brown rice.
