A delicious sweet treat made with fresh grated zucchini! A delicious sweet treat made with fresh grated zucchini!
Number of Servings: 24

Ingredients

    -2 cups flour
    -1 tsp salt
    -2 tsp baking soda
    -3 tsp cinnamon
    -¼ tsp baking power
    -2 cups sugar
    -3 tsp vanilla
    -1 cup oil (I usually use less. Somewhere between ¾ cup and 1 cup)
    -3 eggs
    -2 cups grated zucchini
    nuts are optional

Directions

Mix all ingredients together well and pour into muffin baking sheet. I usually get about 24 muffins out of the recipe so you can always cut it in 1/2 for less. Bake at 350 degrees for 25 minutes. Let cool completely before removing.
