Ingredients

    Broccoli, fresh, 6 cup, chopped (remove)
    Onions, raw, 1 cup, chopped (remove)
    Celery, raw, 1 cup, diced (remove)
    Carrots, raw, 1 cup, chopped (remove)
    Garlic, 3 clove (remove)
    *Potato, raw, 5 small (1-3/4" to 2-1/2" dia.)
    1 bay leaf
    1 Tbsp. thyme
    Low-sodium vegetable stock as needed to cover
    Salt and pepper to taste

Directions

Heat 1 Tbsp. of olive oil in a large pot over medium heat. Add the onion, carrots and celery. Saute until the vegetables are fragrant and soft.
Add the remaining ingredients and cook for 30-40 minutes until the potatoes are cooked through.
