Introduction

Very filling autumn meal! Very filling autumn meal!
Number of Servings: 6

Ingredients

    3 medium acorn squash
    One can of black beans
    One bag of Uncle Ben's Ready-Made Rice
    One onion, sauteed
    2 tsp olive oil
    Grated parmesan cheese (1 cup)
    Bread crumbs (1 cup)
    One bag frozen mixed vegetables

Directions

Preheat oven to 325 degrees, cut each squash in half and place face down in baking dish with small amount of water. bake until soft or 30 minutes.

Meanwhile, saute chopped onion in oil; add bag of frozen mixed vegetables, one can of black beans, one bag of ready-made rice, and season to taste (I usually add cayenne, garlic, ginger, cumin, salt and pepper). Saute this mixture until cooked, and spoon an equal amount into each squash half. Bake again for about 15 minutes, then add bread crumbs and Parmesan cheese on top for another five minutes.
