Introduction

Ingredients

    1 Can Tuna, in Water
    1 cup cooked, mashed Acorn Squash*
    2 chopped Green Onion
    2 grated Baby Carrots
    1 minced Garlic Clove
    1/4 cup finely chopped Water Chestnuts
    1 tbls finely chopped Fresh Cilantro
    1 finely chopped small Serrano Pepper, with or without seeds, depending on how spicy
    1 egg
    Juice of 1/2 lime (about 1 tbls)

    1/4 cup Japanese Panko Bread Crumbs

    1 Tbls Olive Oil

    2 Tbls Asian Sweet Chilli Sauce

Directions

Combine First 11 ingredients. Refrigerate 1/2 hour. Form into 2-4 patties. Roll in Panko Crumbs. Fry in either olive oil or nonstick spray. (Nutritional data with oil) Cook until browned on both sides.

Serve with Asian Sweet Chilli Sauce
