A great hearty soup for the cool weather. Has chickpeas in the soup which is great if you're trying to lower your cholesterol - if ot they're good anyways!! A great hearty soup for the cool weather. Ingredients

    1 lb. Ground Turkey - 93%
    1T olive oil
    2 cloves garlic crushed
    .5 C chopped onions
    4T parsley
    .25C chopped celery
    3-4 springs of thyme
    5-6 carrots diced
    1C shredded cabbage
    4-5 cans beef broth - low fat & sodium
    .5 can tomatoe paste
    2C corn
    2C green beans
    1.5C peas
    2 cans garbanzo beans
    4 med potato diced

Directions

Simmer garlic & onions tioll soft. Add turkey and brown meat. Add celery, carrots, cabbage, 1 can beef broth, and 1/2 can of tomato paste& parsley, & thyme. Season with salt & pepper to taste. Let simmer at least 30 minutes for flavors to come together. Then add remaining ingredents and let simmer on low for about 3 hours.
