Hearty Meal for just about anyone with a nice spice to it. You can easily make this vegetarian too. This would compliment a nice green salad or a sandwich depending on how hungry you are. Ingredients

    1 can HEB Whole Kernal Corn, no salt added, rinsed
    1 can HCF Black Beans, rinsed
    1 can Rotel original, you chose the hotness
    1 medium bell pepper, sliced, your choice of color
    1 medium onion, sliced, your choice of color
    Fresh Mushrooms, couple handfuls, crumbled up
    2 Tbsp Mrs. Dash Table Blend
    2 Tbsp Mrs. Dash Lemon Pepper
    2 cups Water
    2 cups Black Bean and White Corn Salsa, your choice on flavor
    1 generous tablespoon Olive Oil for sautee

Directions

Saute bell pepper, onion and mushroom in olive oil over medium heat. Meanwhile trim pork meat and cut into cube size bites, add to veggies. Once everything is sauteed/browned add 2 cups water and 2 cups of salsa. Turn heat to low, add 1 can Rotel, 2 Tbsp Lemon Pepper and 2 Tbsp Mrs. Dash Table Blend. Allow heat to penetrate, once all ingredients are hot add 1 can of Corn (no salt added) rinsed, and add 1 can of Black Beans, rinsed. Stir thoroughly and let simmer for 30 minutes until hot. Makes 8 1 cup servings.
