Ingredients

    8oz skinless chicken breast
    1/2 t olive oil
    1T chili powder
    1/4 t ground cumin
    1/4 t salt
    1/4 t crushed red pepper (optional)
    1/4 t granulated garlic
    1/2 cup diced avocado
    1/2 cup diced tomato
    1 T diced onion
    2 T chopped cilantro
    juice of 1/2 a lime
    4 corn tortillas
    1 cup shredded romaine

Directions

Makes 2 servings
1 serving = 334 calories

1) Combine cumin, crushed red peppers (if you like some heat), chili powder, garlic and salt. Slice chicken into 4 equal pieces and coat with spice rub created above.

2) Cook chicken in smoking hot oil until thickest section reads 165 degrees farenheit.

3) While chicken is cooking prepare a basic guacamole. To do this, cut avocado in half and score flesh from top to bottom and left to right then scoop out with a spoon. Finely dice tomato, onion and cilantro. Juice 1/2 of lime. Combine all ingredient in a bowl and mix until incorporated.

5) Heat up tortillas with grill, oven or microwave to soften. Place cooked blackened chicken in tortilla, top with shredded romaine and guacamole. Enjoy these healthy and flavorful chicken tacos!
