Introduction

Ingredients

    1 C Water
    2 Medium Bananas, Mashed
    1 tsp Vanilla
    2-1/2 C Flour, Unbleached All Purpose
    3/4 C Flour, Whole Wheat
    2 Tbsp Olive Oil, Extra Light
    3 Tbsp Honey
    1-1/2 tsp Salt
    2 Tbsp Buttermilk, Dry (Saco Cultured Buttermilk Blend)
    2-1/2 tsp Yeast for Bread Machine
    3/4 C Walnuts, large chopped

Directions

Combine ingredients, except nuts, in the bread machine mixing pan. Set machine to Normal (regular, 3-hour) setting. Scrape sides as mixing if necessary, and add a bit of water if dough becomes too concentrated or dry.

As dough is mixing to be positioned for baking, add the nuts and allow to be mixed in briefly. Unless your machine is gentle on additions, don't add at second rise as usual. Wait for the forming kneed. Otherwise the nuts will be crushed and pulverized into the loaf.

When finished, remove and cool until those who can't wait to eat some decide to cut into it! Especially good with Apple Butter.

Makes 16 thin slices, more or less. Calories and nutrition information is based on 16 slices per loaf. Adjust if necessary.

    WOW! This made a delicious, soft, GIANT loaf. I used Omega oil and substituted dry milk powder and added 1 Tbsp lemon juice. 3 hours in my Cuisinart - Med loaf (1.5 lb), light crust, #1 setting (white). Excellent! - 1/17/10

    I may upgrade my rating on this recipe. My bread machine didn't work like it was supposed to. I am going to pull out the manual and find what I did wrong. The nuts did not get added, and the top of the loaf caved in. The bread tastes good. It's just not sweet at all. Eat with honey. - 1/6/13
