Ingredients

    1 14.5-oz can pink salmon, skins & largest bones removed or ground in food processor
    1 1/2 cups celery, chopped
    1 small red onion, chopped
    1 small green apple, chopped
    1/2 tbsp dill, dried (or .5 tbsp fresh, or more if you wish)
    1/8 tsp black pepper, ground
    1/4 tsp salt or more to taste
    1/4 cup plain lowfat yogurt
    3 tbsp canola oil mayonnaise

Directions

Makes 4+ servings, nutrition info for bread not included.

Combine yogurt, mayo, dill, salt, and pepper. Mix in celery, onion, and apple. Add salmon last, breaking up into small chunks if necessary, and fold in gently.

Serve on good bread or in pita pockets with lettuce and tomato, if desired. Keep leftovers refrigerated.
