Ingredients

    5 medium Potatoes
    3 medium stalks celery
    3 beef bouillon cubes
    .75 cup chopped onion
    4 cups water
    1 cup 1% milk
    1 tbsp low fat margarine
    1 tsp oil
    2 tsp corn starch

Directions

Heat large pan over medium heat, add margarine and oil. chop onion and celery as fine as you want, saute till light brown add water and peel and chop potatoes. Add to pot and simmer over medium low heat for at least 1 hour, or until potatoes are tender. Just before serving add 1 cup milk,and add cornstarch to.25 cup water and add to soup. Stir and simmer for approx 5 minutes. Taste and add salt to your liking.
