Introduction

Moist, delicious, flavorful muffins that come together quickly and make a great breakfast. Swap out any other fruit sauce for applesauce; try canned pumpkin, mashed berries, canned butternut squash, mashed banana.

I accidentally made these without the butter and they were still edible, but nowhere near as delicious. Good to know that you can just leave it out and shave off 40 calories and 4g of fat per serving.

Ingredients

    Milk, 1%, 1 cup
    Fiber One Cereal, 60 grams, ground
    Egg, fresh, 2 large
    Butter, unsalted, 0.25 cup, melted and cooled
    Craisins, chopped, 60 grams
    Almonds, toasted, chopped, 60 grams
    Applesauce, sweetened, 1 cup
    Granulated Sugar, 0.75 cup
    Flour, white, 1.25 cup
    Flax Seed Meal (ground flax), .25 cup
    Baking Powder, 3 tsp

Directions

Heat oven to 375'F. Grind Fiber One into flour and mix with 1cup milk and 1 cup applesauce. Set aside for 5 minutes. Add in eggs, butter, sugar (reserve 2 tsp in a small dish and mix with cinnamon). Mix in dry ingredients, then fold in craisins and almonds. Divide into muffin tins, top with cinnamon sugar, bake for 30(ish) minutes until a toothpick comes out clean.

    Incredible!
    I used unsweetened applesauce and cut the sugar to 1/2 C and they were still great. I may try to cut the butter to 3 T next thime, just a thought. - 1/20/20
