Introduction
This is a refreshing salad that my family in Turkeye made daily. It is wonderful for breakfast, lunch, or dinner. Serve with a soft egg and a small baguette for the AM or any dinner menu. Whenever I make it, it goes fast! I am very interested to hear what you all have to say about this recipe. This is a refreshing salad that my family in Turkeye made daily. Ingredients
-
1/2 c. olive oil
14 c. white vinegar
2 cans chic peas (garbanzo beans)
1 ripe tomato cubed
1 onion sliced
1 can large black olives
1 package feta cheese, cubed or crumbled
3 or more cloves of garlic
Parsley to taste
Directions
Open 2 cans of chic peas, drain and wash. Put in bowl.
Open can of olives, drain and wash. Put in bowl.
Wash tomato, cube and put in bowl.
Slice onion and put in bowl.
Peel 1 garlic and thinly slice. Put in bowl.
Peel 2 garlic and put through a garlic press OR if you don't have one of those press down on garlic with a large heavy knife to squash it flat. Put in bowl
Get parsley. Put in bowl
Add vinegar and olive oil.............now taste... add more of either to get the flavor you like.
Refrigerate. Add cubed feta prior to serving. You can add feta immediately but sometimes the cheese can get soggy so I wait until I am ready to serve.
