Introduction

Number of Servings: 8

Ingredients

    8 large flour tortillas
    2 pounds boneless skinless chicken breast, poached and shredded
    1 medium onion chopped and sauteed
    1 small can diced green chilies
    1 tablespoon garlic powder
    1 tablespoon ground cumin
    1 tablespoon chili powder
    salt and pepper to taste
    8 oz. reduced fat cream cheese
    1 cup reduced fat sour cream
    1/2 cup fat free half and half
    1 garlic clove, chopped
    1 jalapeņo, chopped
    12 oz. colby jack cheese, shredded
    PAM cooking spray

Directions

1. Spray the bottom of a 13x9" glass baking dish with PAM. 2. Combine shredded chicken, sauteed onions, green chilies, garlic powder, cumin, chili powder, and salt and pepper to taste.
3. Place a large spoonful of chicken mixture in the center of a tortilla. Roll tortilla, making sure to close both ends.
4. Place burrito seam side down into the baking dish. Repeat with remaining chicken mixture and tortillas.
5. Once all burritos are complete, spray the tops with more PAM and place in a 425 degree oven for 15-20 minutes or until the burritos are crispy.
6. While the burritos are cooking, combine the cream cheese, sour cream, half and half, garlic, jalapeņo, and salt and pepper to taste in a blender and blend until smooth.
7. After the burritos are crisp, cover with the cream cheese mixture and top with shredded cheese. Bake in a 350 degree oven for five minutes or until the cheese is melted.

    Tried this recipe for Pollo Fundido last evening and it was wonderful. Spice measurements are right on because it had an authentic Mexican flavor that would rival any restaurant dish. We love these type meals and even had left overs which was even better. Be sure to try it -- DELICIOUS!!! - 10/25/16
