Introduction

I've had the hardest time finding a good yeast roll recipe, they always came out too dense. These are SUPER fluffy and dare I say rival Logan's Roadhouse??!? Don't make this dough in a bread machine, by hand works *much* better. They do take a long time to rise tho. Ingredients

    1/2 Cup - Sugar plus a pinch
    1/2 Cup - Warm water (105-115 degrees)
    2 packages - active dry yeast
    2tsp - Salt
    1/3 Cup - Solid Vegetable Shortening (I used regular, I think next time I might use butter flavored)
    1 Cup - Cold water
    1 Egg - well beaten
    3.5 Cups - Bread Flour
    *optional - 2tablesppons butter melted* Recipe calculated without.

Directions

In a large bowl, add a pinch of sugar to the warm water. Sprinkle the yeast over the top and let stand until foamy (about 5 minutes). Stir to dissolve yeast. Beat in the remaining sugar, salt, shortening, cold water, and egg until well blended. On low speed, beat in 2 cups of flour for about 2 minutes. Beat in remaining flour (1/2 cup at a time), making a soft dough. Place in a well-greased bowl and turn to coat the dough. Cover with a towel and let rise until doubled (about 1.5 hours).

Punch down the dough and refirgerate uncovered for 2 hours - dough will amost double in bulk!

Grease two 9" cake pans (grease well, rolls WILL stick). Turn dough out onto floured surface. Pull off pieces about 1/4cup each and shape into 20 rolls. Place 10 rolls with sides touching in each pan. *optional - brush tops with melted butter*

Let rise in warm place for about an hour - best way, put a bowl of hottest tap water in bottom of stove or lowest rack and put rolls on middle rack.

Preheat oven to 425, bake until browned (10-15 minutes). Transfer man to wire rack to cool about 5 minutes, or if you're me, eat many while hot!
