Ingredients

1) Taro Root: 750 gms (Boiled and peeled)
2) Salt to taste
3) Oil - 2 tbsp
4) Red Chilly Powder - as per taste, I added 3 tsp
5) Tumeric powder - 1 tsp
6) Asafoetida(HIng) - 1 tsp
7) Urad dal - 2 tsp
8) Mustard seeds - 2 tsp
9) Curry leaves - a few
Directions
1) Boil the taro roots until soft (a knife shoud be able to go through them easily), do not overcook as they can become a mess later
2) Peel and keep aside
3) In a pan, add the oil (this recipe calls for loads of oil in it), add mustard seeds and wait till they splutter, add the urad dal and the curry leaves and saute till the dal turns light red.
4) Add the salt, tumeric, hing and red chili powder and give it just one stir.
5) Add the peeled taro roots and mix and allow to roast on a small flame for about 30 minutes. Stir now and then to prevent burning.
This recipe gives 6 1/2 cup servings.
