Ingredients

    1) Vermicelli - 200 gms
    2) Salt to taste
    3) Onions - 1 to 2 chopped
    4) Green chillies - 1 to 2 chopped
    5) Salt to taste
    6) Curry leaves
    7) Sunflower oil - 3 tsp
    8) Mustard seeds - 1 tsp

Directions

1) Roast the vermicelli till it turns a light brown or red and keep aside.
2) Chop the onions and vermicelli and keep aside
3) In a pan, add the oil and add mustard seeds and wait till they splutter.
4) Add the urad dal and stir till they turn light red
5) Add the onions, green chilly, salt and tumeric and saute till the onions turn transparent.
6) Add water (the level depends on the amount of Vermicelli, for one cup, usually one and a half cups water should be sufficient, ensure that there is not too much water) and bring to a boil.
7) Add the roasted vermicelli and the curry leaves and mix till it becomes a solid. If cooked right, the vermicelli will not stick together or become too gooey.
You also get roasted vermicelli in the market and if you get that, you can skip the first step in the process.

This makes about 5 1 cup servings.

sounds great and delicious but need to explain that urad dal are kidney beans and also need to add them in ingredients section so we can know how much of it to use. I'm Mexican, but I LOVE ALL Indian food. South and North both :) thanks - 1/13/10
