Ingredients

    - 1 tsp canola oil
    - 1/2C chopped onion
    - 1C chopped mushrooms

    - 3 tbs all purpose flour
    - 1/8 tsp garlic powder
    - 1/2 tsp salt (optional)
    - 1/4 tsp pepper

    - 3C cold cook brown rice

    - 3 egg whites
    - 1/4 tsp lemon juice
    *or 1/8 cream of tartar
    - 1C shredded low-fat Cheddar

Directions

- Heat oil in a non-stick skillet. Sauté onion and mushrooms until most liquid is evapored.

- Add flour, garlic powder, salt and pepper. Mix well. remove from heat.

- Combine mushroom mixture and cold rice in a large bowl. Mix well.

- Combine egg whites with lemon juice in a bowl. Beat well. Fold in cheese. Add to rice mixture and combine very well. Lightly grease a non-stick skillet. Heat pan until hot. Use 1/4C mixture for each patty. Shape into patties. Cook each side for 4-5 min until golden brown.

*** Makes 15 patties.
