Ingredients

    Crust:
    1 cup flour
    1/2 cup shortening
    1/2 tsp salt
    3 tbsp ice water

    Filling:
    2 eggs
    16 oz canned pumpkin
    1/2 cup brown sugar
    1/4 cup Splenda
    1 tsp cinnamon
    1/2 tsp ginger
    1/4 tsp cloves
    12 oz. evaporated skim milk

Directions

Mix together flour and salt. Cut in shortening. Add water 1 tablespoon at a time, mixing as little as possible. Form into a ball, roll out on floured surface. Carefully transfer to pie pan, and shape edges. Prick bottom of crust in several places with fork.

Combine egg and pumplin in large mixing bowl. Add sugar and spices. Blend in milk. Pour into prepared pie crust, and place on cookie sheet covered in wax paper. Bake at 425 degrees for 15 minutes. Reduce temperature to 350 degrees for an additional 40-50 minutes or until knife inserted near center of pie comes out clean.
