Ingredients

    Butter, unsalted, 1 stick
    Sweet Corn, Fresh, 8 ear, medium (6-3/4" to 7-1/2" long)
    Onions, raw, 1 cup, chopped
    Egg, 4 large
    Milk, 1%, 1 cup
    Half and Half Cream, 1 cup
    Yellow Cornmeal, .5 cup
    Ricotta Cheese, part skim milk, 1 cup
    Basil, 3 tbsp
    Granulated Sugar, 2.5 tsp
    Salt, 1 tbsp
    Pepper, black, .75 tbsp
    Cheddar Cheese, .75 cup, shredded

Directions

1. Heat oven to 375 degrees and grease a large baking dish.
2. Melt butter in a pan and saute corn and onion over medium high heat.
3. Whisk eggs, milk and half & half in a large bowl. Whisk in cornmeal and ricotta cheese. Then add basil, sugar, salt and pepper. Once mixed add corn mix and cheddar. Pour mix into baking dish and top with more cheese.
4. Cook approxiamtely 40 minutes.
