Ingredients

Sweet Potatoes (3lbs)
Butter
Brown Sugar
Orange Juice
Marshmellows (optional)
Directions
Peel and cut sweet potatoes into 1 inch cubes and place into microwavable AND oven safe dish. Cover dish with plastic wrap and set aside.
Preheat oven to 350 degrees
Combine Orange juice, butter, and brown sugar in microwavable cup. Microwave for 1 minute, stir and repeat for up to 3 minutes. Pull out and set aside.
Microwave the Sweet Potatoes for 10 minutes. Pull out and add orange juice mixture. Cover potatoes completely. Use new plastic wrap and microwave for another 10 minutes.
Remove plastic wrap and add bag of marshmellows to cover the potatoes.
Place dish into oven uncovered for 5 minutes to brown and semi-melt the marshmellows.
Makes 16 1/2-cup servings
