For this recipe you will need the following ingredients:
3 large potatoes, 1 egg, rolled oats (about 1 - 1.5 cups, green onions, salt, pepper, tomatoes, and cheese ( I used light mozzarella string cheese )
Cook the potatoes in a pot as they are, and then peel them when they are cooked. It’s a good idea to let them cool down before you try to peel them – they can get too hot to handle.
Grate the potatoes on the smallest grating surface.
Crack the egg and beat it.
Pour the egg over the grated potatoes.
Be generous with the salt and pepper. Not too generous – you know what I mean :)
Cut the green onions in half and leave the green ends for garnish. Chop both halves in small pieces.
Add the bottom halve of the onion into the bowl with the potatoes.
Knead the mixture with your hands adding handfuls of oat as you go. Keep adding more oats until the dough is firm. I used about 1 1/4 cups of rolled oats.
Form the dough into a firm loaf shape.
Slice the loaf and form round cakes out of the slices. Try to keep the cakes all the same size. They should fit in the palm of your hand. Don’t make them too thick. Mine were about 1 cm max.
Place your cake patties on a dry pan and bake them on both sides until they are lightly brown and become crispy on the surface. Because you are using a dry pan you have to pay attention so that you don’t burn them or make them stick.
Place the cakes in a dry baking pan and then cover each of them with one slice of tomato and cheese. I also sometimes use mushrooms instead of tomatoes. In this recipe I used light mozzarella string cheese.
Place the pan into the preheated oven and bake at 230°C until the cheese melts over the top of each cake.
