Potatoes are a prime favourite and a staple part of our family diet and we have found various ways of cooking them palatably.This is a gravy dish with a thin gravy is very popular in North India from where it originates. Ingredients

    250-300gms.peeled and diced Potatoes
    50gms.ripe Tomatoes chopped fine
    3-4medium hot Green Chillies slit lengthwise
    1tsp.Turmeric Powder
    1tsp.Red Chilli Powder
    1tsp.Coriander--Cumin Powder
    1tsp.Cumin Seeds
    1tsp.Asafoetida(Hing)Powder
    Salt to taste
    1"ginger Root minced fine
    3-4tbsps.chopped fresh Coriander(Cilantro)Leaves
    1tbsp.Sunflower Oil

Directions

Heat Oil in Non-Stick Wok.Lower flame and add Cumin Seeds,finely minced Ginger,Turmeric and Asafoetida Powders in the order mentioned. When the Seasoning sputters add finely chopped Tomatoes and slit Green Chillies. Saute till Tomatoes are soft and pulpy.Add Coriander--Cumin Powder and saute for 2-3 minutes more.Add Potatoes,Red Chilli Powder,Salt to taste with Water to form a gravy.Cover and cook on low flame till Potatoes are well done and slightly mushy.This should have a thin gravy.
Garnish with chopped Coriander(Cilantro)Leaves and serve hot with Indian Bread.
