Number of Servings: 4

Ingredients

    1 cup pearl barley (dry)
    3 1/2 cups chicken or vegetable broth
    1/4 cup finely chopped onion
    2 cups sliced, fresh mushrooms
    1 tbsp olive oil
    4 cups baby spinach
    1/2 pound shrimp
    1/4 tsp black pepper
    2 tsp ground sage
    sea salt to taste (optional; not in nutrition info)

Directions

In a medium pot, bring broth and barley to boil. Cover and simmer for 50 minutes.
In a skillet, saute the onions and mushrooms in the oil. Add spinach. Cook for about 3 more minutes.
Check barley after 50 minutes. When there is no remaining liquid, add shrimp and pepper. Turn heat up to medium and cook for 5 more minutes. Add mushroom mixture, sage and salt (if using) to barley. Stir and cook for a few more minutes.

Serves 4

    Good idea, but the mushrooms/spinach/sage combo was a little to earthy for the shrimp. Will be stealing the broth/barley base for future recipes, though! - 11/13/13
