Ingredients

    Dough:
    1/2 cup Unsalted Butter (very cold)
    1 1/3 cup Flour (All Purpose)
    1/2 Tsp. Salt
    1/4 cup Water (very cold)

    Quiche Filling:

    3 Eggs
    1 Cup Milk
    4 Tbsp Shredded Parmesan Cheese
    8 Cups Fresh Spinach
    Dash of salt and pepper

Directions

Preheat oven to 375 degrees.

For dough:
Put the flour in a food processor with the sharp blade attachment. Slice the very cold butter (preferably frozen) and add to flour. Add salt. Turn on the food processor and slowly add the water. Wait until everything combines and forms a ball. Refrigerate dough until ready to use.

Put fresh spinach in a large pan on medium heat. Stir and wait for spinach to cook down. Once cooked, put spinach in a strainer and try to press out as much water as possible.

Roll out dough and press into a 9-inch quiche pan (pie pan will do). Put strained spinach in the quiche pan on top of the dough. Mix egg, milk, salt and pepper in a large bowl. Whisk until smooth. Pour mixture over spinach in quiche pan. Sprinkle parmesan cheese on top.

Bake at 375 degrees for 45 minutes or until top of quiche is golden and filling looks fairly firm.
