Introduction

Ingredients

    2 packs of egg beaters (about 4 eggs equivalent)
    9 eggs
    3/4 cup shredded 2% cheese - cheddar, colby or other yellow cheese
    7 slices of deli ham - extra lean. Cut into little pieces
    1/2 cup 2% milk
    1 tablespoon butter - or can substitute PAM or non-stick spray if you want to eliminate the fat of the butter

Directions

Wisk the eggs and egg beaters until frothy. Add the cheese, milk and ham bits. Wisk again.

In large skillet, melt butter (or spray with PAM). Pour in egg mixture. Stir occassionally, lifting the mixture from the bottom to the top of the pan. This should create fluffy chunks of eggs.

The eggs are done when they are all solid and there is no wetness left.
