Ingredients

3/4 cup rolled oats
1 cup all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup margarine, softened
2/3 cup brown sugar
1 large egg
1 tsp. vanilla extract
3/4 cup semi-sweet chocolate chips
Directions
Preheat oven to 350 degrees F.
Grind oats in a blender or food processor. Transfer to a medium bowl and stir in flour, baking soda and salt. Beat margarine and sugar with an electric mixer until smooth. Beat in egg and vanilla extract. Add dry ingredients and gently mix with a wooden spoon until combined. Gently fold in chocolate chips.
Drop dough by heaping teaspoonfuls, one inch apart, onto an ungreased, non-stick cookie sheet. Bake for 10 minutes, until lightly golden. Cool for 2 minutes on cookie sheet, then transfer onto a wire cooling rack and let cool completely.
Makes 20 good sized cookies.
*Note: cookies will not spread much, you may wish to press them down on the cookie sheet before baking if you desire thinner cookies.
