Introduction

Number of Servings: 36

Ingredients

    1/2 C heart-healthy margarine (Smart Balance, ICBINB, etc)
    1/2 C natural low or no salt peanut butter
    1/2 C Splenda brown sugar blend
    1/2 C Splenda sugar blend for baking
    1/4 C egg substitiute
    1 tsp baking soda, dissolved in 2 Tbsp hot water
    1 1/3 C flour

Directions

Cream margarine and sugars, then add peanut butter and egg substitute. Beat well. Add hot water and soda, and then flour. Mix well. When dough comes together, form into 3/4" balls with floured hands, and place on cookie sheet. Flatten with a fork, criss-cross fashion. Bake at 350 degrees for 10 - 15 minutes. Makes 3 dozen-ish.
