Ingredients

    Chicken Breast, no skin, (3 standard frozen chicken breast halves)

    Trader Joe's Thai Red Curry Sauce 11 oz. bottle

    *Medium yellow onion

    Red Potato, 600 grams (4 small to medium size potatoes)

    Fresh Baby Carrots, 6 oz

    Collard Greens - 4 oz

    White Rice, long grain, 1 cup

Directions

Chop chicken, potatoes, onion and carrots. Cook in pan with 1 TBSP of your favorite oil, I prefer peanut, until potatoes and carrots are tender, chicken is thoroughly cooked and onion is turned to golden yumminess.

In the meantime, cook rice seperately.

Add greens and cook until desired tenderness. You may add greens in the first step if you would like them to be cooked to the point of mushy.

Add Trader Joe's red curry simmer sauce, stir, reduce heat, cover and simmer for 12-17 minutes or until it reaches your desired consistency.

Serves 5 average people, or 3 of me since I cannot get enough of that wonderful curry simmer sauce.

Feel free to mix and match your favorite veges, such as broccoli and zucchini for more wonderful taste explosions. You can also add coconut milk to make it creamier or ginger to add a bit of a spicier kick.
