Number of Servings: 12


    192g (1 cup) sugar
    120g (1 cup) whole wheat flour
    85g (2/3) cup oat bran
    30g (1/3 cup) ground flax seed
    1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    4 eggs, lightly beaten
    1 cup buttermilk
    1 tsp. vanilla
    2 T. oil
    1 quart home made cherry pie filling or 1 can of boughten pie filling


Preheat oven to 350. Coat 9"x13" baking pan with cooking spray. Combine dry ingredients in a bowl. In another bowl whisk together eggs, buttermilk, vanilla and oil. Stir into dry ingredients. Spread hal of batter over bottom of pan. Spoon pie filling evenly over batter. Spoon remaining batter over top of filling and smooth as best you can. Bake 35-40 minutes or until done. Makes 12 servings.
