Introduction

Traditional New Mexican cookie. Calories calculated using rum as the liquid. Cinnamon sugar made using 1 1/2 c. sugar and 1 tbsp. cinnamon. Traditional New Mexican cookie. Calories calculated using rum as the liquid. Cinnamon sugar made using 1 1/2 c. sugar and 1 tbsp. cinnamon.

Ingredients

    1 lb. lard (not butter, margarine, or crisco)
    1 1/2 c. sugar
    2 tsp. anise seeds
    2 eggs
    6 c. flour
    3 tsp. baking powder
    1 tsp. salt
    1/2 c. liquid (rum, brandy, wine, milk, or water)
    cinnamon sugar

Directions

Cream together lard, sugar, anise seeds, and eggs.
Add flour, baking powder, and salt to cream mixture slowly. Knead by hand. Add liquid. Continue kneading.
Roll dough until 1/4" to 1/2" thickness. Cut into desired shapes.
Dust with cinnamon sugar mixture on both sides.
Bake at 350 for about 12 minutes. Makes about 8 dozen cookies depending on the size of cookie cutters used.
