Introduction

These are so easy to make and bake. It is really Paula Deen's Magical Peanut Butter Cookie recipe but I used real sugar on top, so needed the calorie counts for that. Number of Servings: 20

Ingredients

    1 cup peanut butter, creamy or crunchy
    1 cup Splenda, granulated
    1 egg, beaten
    1 teaspoon vanilla extract

    For the top: 1.5 - 2 tsp. sugar

Directions

Preheat the oven to 350 degrees F. Grease a large baking sheet.

In a mixing bowl, combine the peanut butter, Splenda, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Dip the balls in sugar and place sugar side up, on the baking sheet. Press a crisscross design on each cookie using a fork.

Bake for 12 minutes, Cool slightly before removing from pan.

Makes 20 cookies.

    I made this right away since I had all the ingredients at home. My son needs gluten-free and we were struggling to afford the store cookie prices on gluten-free. He loves these cookies, another variation we used is rolling them in confectionary sugar while warm. Yum! - 2/6/10
