Ingredients

    2 cups brown rice
    1 tsp canola oil
    1 onion, cut in short strips
    1 carrot, chopped
    2 stalks green garlic, chopped
    2 cups broccoli greens, chopped
    2 cups broccoli, chopped
    1/2 cup mushrooms, sliced
    1/2 tsp red pepper flakes
    3 Tbsp peanut butter, chunk style
    1/4 cup soy sauce
    1/3 cup lime juice
    1/4 cup water


Directions

Prepare brown rice. While rice is cooking, heat a large nonstick wok or skillet over high heat. Add the oil to the pan and warm. Add the onions, carrot, and garlic and stir-fry for 2-3 minutes. Add the mushrooms, broccoli, greens, and pepper flakes and stir-fry for 2 minutes more.

Mix peanut butter, soy sauce, water, and lime juice in a small bowl and add to wok or skillet. Stir gently and bring to a boil. Serve over rice.
