Introduction

This was tough, since this is the first year since our daughter was diagnosed with Type I diabetes This was tough, since this is the first year since our daughter was diagnosed with Type I diabetes
Number of Servings: 36

Ingredients

    1 Cup Soft Butter
    1/2 Cup Sugar
    1 Egg
    3 tsp vanilla
    3 Cups Flour
    1/2 tsp baking powder

Directions

"Cream" together the butter, sugar and egg in an electric stand mixer with the paddle attachement (or in a bowl with an electric hand mixer). Stir in vanilla. Sift together flour and baking powder and then add to the butter mixture.
Roll and cut out really cool Holiday shapes (typically all of one design so you can use all the dough and not have more or less than the 36 cookies we found this makes) and bake at 425 degrees for like 4-5 (maybe 7) minutes.

Finish with a frosting made from milk and powdered sugar. (One Tbls of powdered sugar seems to make enough for one cookie so if you frost these, add 10 grams of carbs per cookie) See Christmas Cookie Frosting by TonyRich29

    Very Good
    I added glazed chopped fruit. The dough was a little bit dry to roll out so I added about 1-2 Tblsp candy cane egg nog. - 12/13/12

    Excellent recipe for a lower carb cookie. I baked them and gave 1/3 of the cookies as part of a birthday gift. Reminds my family of a biscuit more then a cookie, which is preferred. A nice treat for guests for gift giving. - 11/22/10
