Introduction

I've never been a big turkey-dinner fan; however, I love having all the options for leftovers!

Number of Servings: 6

Ingredients

    2 c. uncooked pasta
    1 T extra virgin olive oil
    1/4 c. white wine
    3 cloves garlic, chopped
    1/2 med. onion, chopped
    2 celery stalks, chopped
    2 c. cooked turkey, chopped or shredded
    1/2 c. light sour cream
    1/4 c. black olives, chopped
    1/2 c. canned tomatoes & green chilies (I use Ro*Tel)
    2 oz pepper jack cheese, grated or sliced

Directions

Pre-heat oven to 325.

Prepare pasta according to directions on package.
While pasta is boiling, sautee garlic, onion & celery in olive oil and white wine until tender.
Combine cooked pasta, sauteed vegetables, turkey, sour cream, black olives & tomatoes; pour into casserole dish.
Top with pepper jack cheese and bake for 10 - 12 minutes.
Salt and pepper, according to taste.
