Introduction

Number of Servings: 6

Ingredients

    2 packages of mini portabella mushrooms
    1 package of frozen spinach, thawed
    1/2 cup italian bread crumbs
    1/2 cup shredded parmasean cheese
    1 egg
    1 tsp extra virgin olive oil
    Cooking spray

Directions

Take 9x13 pan and spray with cooking spray.
Brush tops of mushrooms with a damp paper towell to wipe off any dirt.
Twist off stems of mushrooms and place into the oiled pan.
Take frozen spinach out of box and squeeze spinach until all the liquid is out.
Place in a bowl.
Crack egg into spinach.
Pour bread crumbs into spinach and egg mixture.
Take out 2 tsps of cheese from 1/2 shredded parmasean.Pour the rest from the 1/2 cup of cheese into the spinach mixture.
Stir the spinach mixture until all is combined.
Then take a small spoon and fill mushrooms with spinach mixture.
After all the mushrooms have been filled, take the 2 tsps of cheese and sprinkle over the mushrooms.
Drizzle the tsp of olive oil over the mushrooms.
Bake at 350 for 20 minutes or until cheese has melted.
