Ingredients

    1/2 cup + 2 Tab filtered water
    1 egg
    1/4 Tab vanilla extract
    1/4 cup canola oil
    1 cup dry pancake mix
    1/3 cup ricotta cheese, low fat/light
    1 Tab lemon zest

Directions

Combine water, egg, vanilla and oil in bowl. Mix well. Add pancake mix to bowl and mix until combined. Whisk into mixture ricotta cheese and lemon zest. Warm nonstick skillet to medium heat. Do not use cooking spray or oil. Palce 1/4 cup batter onto skillet. Cook til bubbles form and edges begin to firm; flip.

Makes 8-9 pancakes.
