Ingredients

    Ingredients:
    Onions, raw, 1 medium (2-1/2" dia)
    Garlic, 1 clove (remove)
    Butter, salted, .125 cup
    *Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.)
    Cauliflower, raw, 1 head, medium (5-6" dia)
    *Onion powder, 1 tbsp
    Curry powder, 2 tbsp
    *Coriander seed, 1 tsp
    *Cumin seed, 1 tsp
    Water, tap, 6 cup (8 fl oz)
    So Nice unsweetened fortified soy beverage, 1 cup


Directions

Makes 6 standard soup bowl servings.

Melt butter in heavy stock pot. Add chopped onions and garlic and cook until transluscent. Add peeled, quartered potatoes and seasonings and stir to coat. Add cut up cauliflower and water and simmer for about 30 minutes. Once potatoes and cauliflower are soft, remove from heat. Puree in a blender and return to pot. Add soy milk and heat to just below boiling. Serve.
