Ingredients

use any type of flat bread or pita that matches the calorie count of 150 calories (or less) per serving.
1 tblsp olive oil
2 boneless skinless chicken thighs (or breasts to lower the calories and fat)
1/4 cup any sort of basic pizza sauce (no corn syrup brands are best)
1/4 cup grated mozzarella
3 cloves garlic (optional)
1 cup frozen spinach
4 tblsp Parmesan cheese
(other seasoning or spices you may like)
Directions
Makes 2 small pizzas per serving for 8 small pizzas total...or using whichever flatbread that offers 600 calories for four servings.
Warm tblsp of olive oil in a frying pan. Mince or slice garlic cloves to your preference. Saute' garlic over medium heat very lightly.
Add chicken thighs to pan...you can cut them raw and add to the garlic or cut it up after it's cooked.
The chicken cooks in about 10-15 minutes in a small frying with garlic and olive oil. Add some salt, pepper, onion powder, sauteed onions, or anything else you may wish to season the chicken with.
Microwave the spinach for 3min in the microwave. Add to the saute' pan if you wish or leave separate as a topping.
Place all of the flatbreads on a nonstick cookie sheet, spread sauce on each, top with mozzarella, chicken, spinach, and parmesean cheese.
Bake at 400 for 10-15 minutes.
