Introduction

I have tried this recipe two different ways...one only grilling the chicken and onions, and the other gently wilting the spinach in while grilling...Either way, both are great! Ingredients

    1 clove garlic-crushed
    2 thin sliced onion rings
    6 raw almonds-slivered
    2 cups fresh spinach
    2 oz cooked grilled chicken, cut into strips
    Salt/Pepper to taste
    1/2 tbsp. light margarine
    1/8 cup Mandarin oranges

Directions

Grill chicken in a skillet until done. Remove chicken. Saute almonds and butter in sauce pan. Allow almonds to get a bit soft. Add garlic and onion. Cook until onion begins to caramelize. Add spinach and cook just until spinach begins to wilt. Serve on plate and top with chicken...garnish with mandarin oranges.
