Ingredients

    1 tsp Dijon mustard
    2 Tbl. Cider Vinegar
    2 Tbl. Canola Oil
    1 can (15 oz) black eyed peas(drain & rinse)
    1 can corn or frozen corn, thawed (10 oz)
    1/2 red bell pepper, diced
    2 scallions, thinly sliced
    Salt & pepper

Directions

Whisk together mustard, vinegar and oil. Add remaining ingredients. Refrigerate for at least one hour. Bring to room temperature before serving.
