Introduction
Normally I would also add mint to this recipe, (I have included it in the ingredient list but not the nutritional info) but today when I made it I had no mint. Also, I would normally use fresh parsley not dried. Lastly, I used lime juice over the apple to use 1/2 a lime I had in the fridge. Ingredients

* 3 cups water
* 1 1/2 cups cracked bulgur wheat
* 2 apples, cut up
* 2 tablespoons lemon juice
* 6 tablespoons parsley, chopped
* 4 tablespoons mint leaves, chopped
* 1/2 cup walnuts (or pecans)
* 1 teaspoon salt
* pepper, to taste
* 2 cups chicken breasts
* 1/4 cup scallion, sliced
* 1/4 cup lemon juice
* 3 tablespoons olive oil
Directions
SERVES 6 (about a cup and a half per serving?)
1. Boil water. Pour over bulgur. Let stand for 45 minutes. Press out excess water. Let cool.
2. Pour 2T lemon juice (I used lime juice) over cut-up apples. Tart, crisp apples like Braeburn are best.
3. Chop and toast walnuts at 325. Let cool.
4. Cook chicken breasts, let cool, cut into cubes. Poaching works well.
5. Mix 1/4 cup lemon juice and 3T olive oil for dressing.
6. Combine all ingredients and mix well. Chill. Tastes best after sitting several hours. Store in refrigerator.
