Ingredients

    1/2 c applesauce (unsweetened)
    1/4 c. Smart Balance
    1/2 c. brown sugar
    1/2 c. Splenda
    1 large egg
    1/3 c. shredded coconut
    3/4 c. plus 1 tbsp. flour (can use whole wheat or white or blend)
    pinch salt
    pinch baking soda
    pinch cinnamon
    1/4 tsp. vanilla extract
    2 c. oats
    1/3 c. unsalted peanuts or cashews
    1/3 c. m & m's or chocolate chips

Directions

Blend applesauce, Smart Balance, and sugars. Add egg and vanilla and combine. Add coconut, flour, salt, baking soda, and cinnamon. Mix until blended. Fold in oats, then mix in nuts and chocolate (if desired).

Drop by teaspoonful onto parchment lined cookie sheets.

Bake in 360 degree oven-10 to 12 minutes, they do not spread. Cool on rack.
