Ingredients

    Ingredients:

    * Chicken Drumstick, 3 drumstick, bone and skin removed
    * Garlic, 3 clove
    * Onions, raw, 2 medium (2-1/2" dia)
    * Lentils, 1.5 cup
    * Canned Tomatoes, 1 can
    * Tomato Paste, 0.25 cup
    * Soup, bouillon cubes and granules, low sodium, dry, 1.5 teaspoon made up with 400ml water
    * Olive Oil, 2 1tsp
    1/2 teaspoon Cummin, 1/2 teaspoon Coriander

Directions

1. Heat oil in frying pan and fry chicken pieces until browned on all sides.
2. Drain the chicken from the pan and transfer to a flameproof casserole.
3. Add the garlic and onions to the frying pan and fry until they begin to soften.
4. Stir in the seasoning and spices and fry for a minute.
5.Add the onion mixture to the chicken along with the lentils, tomatoes, stock, and tomato paste.
6. Bring gently to the boil, reduec heat, cover and simmer for 1 hour.
7. Serve with brown rice.
