    Cook meat in separate pan with half onion- diced. When meat is cooked, add refried beans and seasoning pkg. (I used a Cheese Taco flavored seasoning pk. and it was AWESOME!- bought at walmart- mc cormick, I think). Fold mixture into 8 tortillas. Place in casserole dish, folded side down.

    In separate bowl, mix remaining ingredients (including diced half of onion and diced tomato) except for shredded cheese. Sprinkle cheese on casserole and bake until bubbly and desired doneness. SPICES ARE GUESSED--- season to desired taste.


Makes 8 servings. Would be delicious without meat, or with ground beef. I used turkey b/c it's what I had on hand. Serve with lots of lettuce and other fixings. Great with guacamole and chips! Enjoy!
