Ingredients

1/4 cup Slivered Almonds
2 slices applewood smoked bacon
6 ozs or 2 servings fresh spinach
1 med red delicious apple (cubed with skin)
1/4 cup red or purple onion (sliced thinly)
1/2 cup of craisins (dried cranberries)
1/2 cup swiss cheese (finely grated)
1/4 cup parmesan cheese (grated)
vinaigrette=
2 tbsp balsamic vinegar
1/2 tsp extra virgin olive oil
2 tsp dijon mustard
1 tbsp light miracle whip dressing
1/4 tsp black pepper
1 dash salt
Directions
1. Spread slivered almonds on a cooking sheet and broil in oven a few minutes until lightly brown and set aside.
2. Microwave bacon for approx 3 minutes until crisp and set aside.
3. Combine spinach, apple, onion, half the craisins, a half the swiss cheese in a large bowl and toss till mixed.
4. Sprinkle almonds, bacon, rest of craisins, rest of swiss cheese, and parmesan cheese on top of salad.
To make creamy balsamic vinaigrette:
Whisk together balsamic vinegar, olive oil, dijon mustard, miracle whip, pepper, and salt in a separate small bowl until well mixed.
Makes 4 2-cup servings
