Introduction
Not exactly diet, but good. Tried to copy from a restaurant that serves battered seafood. Yum. It came pretty darn close. Any kind of fish can substitue for Haddock. Not exactly diet, but good. Ingredients

1 1/4 cup Aunt Jemima Buttermilk Pancake Mix
1 cup Skim Milk
1 large egg
3 fillet Haddock (cut in half)
1/4 cup Canola Oil
Directions
In a dish, combine mix, milk and egg with a wisk until fully incorporated. In a frying pan, add oil and heat until frying consistency. Dip pieces of fish in batter and fry for 3 minutes, turning half way through. Let drain on towels.
