Introduction

This is one of the easiest recipies I have tried. No gadgets to get out, no whisking, no mess. Just mix and bake, and perfect results every time. Ingredients

    1 cup dates, pitted and chopped
    1 cup dark brown sugar
    1/4 cup margarine
    1 cup boiling water
    1 3/4 cups self-rising flour
    1 teaspoon baking soda
    2 teaspoons vanilla extract

Directions

Preheat oven to 400 degrees F (200 degrees C). Grease and flour a 9x5 inch loaf pan.

In a large bowl, combine dates, brown sugar, margarine and boiling water. Let stand 15 minutes. Stir in flour, soda and vanilla. Pour batter into prepared pan.

Bake in the preheated oven for 45 minutes. Allow to cool.

    Yum! Nice and moist. I didn't have Vanilla so i used 1 tsp each of whiskey and rum instead! The only reason i gave 4 stars instead of 5 was that it felt maybe a little dry on the outside using the flour - wondering if there's an alternative - would cornmeal be too weird? - 6/26/07
