Introduction
I made mine with heat in each bite - lots of cayenne. But don't be shy with the honey, a little sweet against the spice is nice. I would have liked the Panko to have browned up a bit more, but, it was really good none the less. Next time I may try a higher temp, less cooking time. We'll see! Ingredients

boneless, skinless chicken breasts, 8 oz. total
Honey, 2 tbsp, warmed up in microwave to soften
Panko breadcrumbs, 1/2 cup
cayenne pepper, black pepper, salt
Directions
Preheat oven to 375.
Spray cookie sheet with nonstick spray.
I had two 8oz chicken breasts - I split each one to have 4 4oz thin breasts (not into tenders, into scallopine style breasts). I layed a piece of sarap wrap over them pounded them to an even thinness.
Take a pastry brush and brush the top of one breast with honey; dip into panko breadcrumbs, pressing to coat. Brush the next side with honey; flip and do the same. Sprinkle the chicken with salt, pepper & cayenne pepper. Place on cookie sheet, seasoned side down. Repeat with each breast. (you may have to reheat the honey once or twice along the way to keep warm and soft. Season the chicken with salt, pepper and cayenne pepper.
Cook for 10 minutes; flip, cook another 5 min. or so - - - don't let it dry out. You are just flipping it to crisp up the other side.
I served these with turnip greens & mashed potatos.
