Healthy, hearty and delicious. The sodium content is quite a bit lower than indicated in the nutrition breakdown as the breakdown doesn't account for the fact that you drain and rinse the beans. Ingredients

1.5 lb. Outside Round Roast, cut into bite sized pieces
1 28 oz can Diced tomatoes, no salt added
1 19 oz can Red Kidney Beans, drained and rinsed
1 19 oz can Black Beans, drained and rinsed
1 can Tomato Soup
1 Onion, coarsely chopped
1 Green Pepper, coarsely chopped
1 cup Celery, diced
2 cups Mushrooms, sliced
2 Tbsp Chili Powder or to taste
3 large Cloves Garlic, minced
1 Tsp Cumin or to taste
Salt and Pepper to taste
Directions
Brown meat in non-stick frying pan. Put all ingredients in large slow cooker and cook 4-5 hours on high or 8-10 hours on low.
You can add more chili powder or hot peppers if you wish, but my husband can't handle the spice so I usually add more heat to my own servings.
Makes about 12 1-cup servings.
